日式乳酪蛋糕

人生第二次bake cheesecake...
第一次献给了oreo cheesecake, 可是太甜,不是很喜欢。。

这次参考了PEPSAKOY的recipe,试着做Japanese Souffle Cheesecake...
I choose to bake japanese cheesecake because。。。1) it is not as fattening as western cheesecake, 2) it is fluffy, and still it is a cheesecake, 3) it has a rich, full flavour without being too rich....

But I am not so sure I should call it a success or fail this time, because it left me upset about the texture and appearance. But taste-wise, I still love the cream cheese without being overly cheesy. And my hubby and friends are so supportive that they "only leave a very small piece" on the table, still happy though...

Japanese Souffle Cheesecake Recipe:

Ingredients:
125g cream cheese at room temperature
20g butter, soften
40ml milk
65g caster sugar
3 eggs, white and yolk separated
1/4 tsp cream of tartar
40g self raising flour (or cake flour)
1/4 tsp salt
1 scant tbsp orange juice
1 tbsp orange zest

Instructions:
1. Add 500 ml water into a big baking tray ( that the tin you use for the cheesecake can fit in) and place the tray in the oven then preheat the oven to 160c.Line the base and side of a 18-20 cm springform/cake tin with parchment paper. Then use a big piece of foil to wrap the tin around from the bottom upto top of the tin side.

2. Place the butter, creamcheese and milk in a bowl set over a saucepan of barely simmering water, being careful not to let the bowl touch the water, then wait until the butter has melted, remove the bowl from the heat and give it a really good stir until the mixture is smooth, set aside and leave it cool to the room
temperature.

3. Add the orange juice and zest to the creamcheese mixture, stir to blend then add the yolks and mix them until incorperated. Sift the flour and salt into another mixing bowl, pour over the cream cheese and egg mixture in the center of thr flour. Quickly whisk or stir everything until just blended ( don't overmix or the cake will be tough)

4. In a seperate mixing bowl , beat the egg white with cream of tartar until foamy, then gradually add the sugar ,few tablespoons at a time, and continue to beat at high speed until reach the soft-medium peak ( more than soft but not hard peak). Gently fold the white into the creamcheese mixture until blended.

5. Pour the batter into the prepared tin. Place the tin in the preheated baking tray and bake for 50-60 minutes or until a toothpick inserted from center comes out clean. Turn the cake out on to a wire rack once taken from the oven ( the cake will shrink if left too long in the tin!). Leave to cool at room temperature, then let it set in the fridge for another hour or so before slicing and serve.

The cake actually shrink upon removal from the oven, I think I should have left it long enough in the oven, so that's probably where I went wrong...

Share it to my friends...

And finally 这边剩一点,那边剩一点。。probably they scared who eat the last piece gonna wash the dishes..

Eiffel Tower, I Didn't Know It Looks Like This!

Addicted to Facebook's "Guess the Sketch" game recently...

It is a game of drawing and guessing. Guess what other people are drawing and win the match. I like the game because I can find out how good is my vocabulary and drawing skills....And....it is very interesting to see how people draw out the meaning of the words.

But, sometimes the drawing is so "creative" and makes me laugh till I burst.

Can you tell the answer for this is "Paris"?? I didn't know Eiffel Tower looks like this...But I still get it right finally because the "drawer" cheating by giving the words hint.

I can't draw well also, but really love this game...

Fishing at Teluk Bahang

Ah Lok, the pancing guru dated us fishing at Teluk Bahang during the weekend.

Wake up 7 in the morning, and meet up at Gurney tower for breakfast. First time trying Subway breakfast, the burger 卖相 not so good, but still taste nice.

Hubby driving and we reached Teluk Bahang around 10am... Ahhhhhhhhhhh...How can I forgot to bring my sun block, and it is damn hot outside. Luckily Ah Lok brought a very small bottle and he shared to me.

There is a long "bridge" to walk, until we reach the fishing place which is sheltered. The view is so nice and no one is there to share the place with us, just 3 of us. We can see a lot of fishing boats parking near there, and see the fisherman bathing on the fishing boat with only 三角裤. So funny!!

Ah Lok helped to get the fishing rod ready with sotong as bait, and set nicely waiting fishes to rise to bait.
It has been a hard time for first 1 1/2 hours, and we started to play "chor dai di" while waiting for fishes.

Finally, 11 something....We started to feel some movement on the fishing rod....and the hard time is over. However, 1st fish not eatable according to guru...Sigh++

And my bait is gone, but where's the fish....

Me, lonely waiting for fish to grab my bait.

But still we able to catch around 7 fishes "only" and a mini 濑尿虾 before we leave Teluk Bahang. Also caught a weird organism as shown in photo, we named it 海蜈蚣.

We fried everything we caught as our dinner. Yummy!!
And thanks Ah Lok to bring us there, a nice place for relaxing and photo shoot. But I got sun burned again because walking out from the shelter to take photos. The sun block not so effective.

The Beginner of DSLR

Started to play around with the brand new Canon 450d DSLR from hubby. Thanks for investing this new hobby and I know he likes it very much too. He feels glad whenever I am willing to spend time learning new things.

Has been very hardworking during the weekend to drive around and see which place is suitable for our first time shooting with the new DSLR. Hubby let me try out the new toy and he shoot with the S3IS semipro so that we can compare the different quality of photos between the two machines.

First time facing the difficulty to capture a proper photo with the manual setting. Wrong settings make the quality even worse than auto mode. And photography is not just taking photo with the correct mode, but also depends on angle of shooting, which I am still weak in this. Still a lot to learn , will spend more time attending photography sharing classes. We are so excited to explore this new hobby......

Just me and the new toy...
